方向一:益生菌益生性质、益生机理及其调控机制

研究内容:开展自然发酵乳的微生物生态和功能菌种的发酵机制,开发功能性发酵乳的工业化生产技术;发酵法制备生物活性肽,在分子、细胞和动物水平研究其生物活性的生物学机制。

方向二:微生物环境适应性机制及其酶的开发应用

研究内容:利用多组学、反向遗传学、生物化学等多学科技术手段研究不同环境胁迫下红酵母中油脂、多不饱和脂肪酸、类胡萝卜素、胞外多糖等多种天然生物活性物质合成与环境胁迫适应性之间的关系,揭示不同环境胁迫条件下这些生物活性物质合成调节的信号转导途径及其调节机制,进一步结合代谢网络模型构建和代谢工程策略构建高效生产不同生物活性物质的代谢工程菌株。

方向三:人体微生物组

研究内容:聚焦微生物组在女性生殖健康(不孕症、HPV感染)及癌症(甲状腺癌、宫颈癌、结直肠癌)中的作用机制,探究分娩方式(自然分娩/剖腹产)对新生儿肠道菌群定植及早期健康的影响,为疾病防治和母婴健康提供新策略。

方向四:功能性发酵食品研发及其活性机制的研究

研究内容:开发具备降尿酸、降血压作用的发酵乳制品,调节睡眠的益生菌豆浆豆豉和益生性锋产品,以及探究功能食品发挥益生效用的分子机制。
